Caramel Apple Cheesecake

Ingredients:
- 1 (21 oz) can of apple pie filling
- 1 (9-inch) pre-made graham cracker crust
- 2 (8 oz) packages of cream cheese, softened
- ½ cup white sugar
- ¼ teaspoon vanilla extract
- 2 large eggs
- ¼ cup caramel sauce
- 12 pecan halves
- ⅔ cup chopped pecans
Instructions:
- Preheat the oven: Set it to 350°F (175°C).
- Prepare the crust: Take ¾ cup of apple pie filling and set it aside for later. Spoon the rest of the filling into your graham cracker crust.
- Make the cheesecake filling: In a large bowl, beat the softened cream cheese, sugar, and vanilla together until smooth. Add in the eggs and mix well. Pour this creamy mixture over the apple pie filling in the crust.
- Bake: Place the cheesecake in the oven and bake for about 35 minutes. The edges should puff up and the center will still jiggle a little when you gently shake the pan. That’s totally fine! Remove it from the oven and let it cool to room temperature.
- Caramel apple topping: In a small saucepan, warm the reserved apple pie filling and caramel sauce over medium-low heat for about 1 minute.
- Decorate: Once your cheesecake has cooled, arrange the apple slices around the edge. Spread the warmed caramel sauce on top, then decorate with pecan halves around the outer edge and sprinkle the chopped pecans in the center.
