Ingredients:

  • 3 ½ cups all-purpose flour (divided, add more if needed)
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 1 ⅓ cups warm water
  • 2 tablespoons softened butter
  • ¼ teaspoon salt
  • 3 tablespoons baking soda
  • 2 tablespoons melted butter
  • 1 tablespoon coarse sea salt (or to taste)
Instructions:

  1. Mix the dough: In a large bowl, whisk together 1 cup of flour, yeast, and sugar. Stir in the warm water and softened butter until it’s well combined. Let it sit for about 15 minutes, until it starts to bubble.
  2. Form the dough: Stir in the salt, then gradually mix in the remaining 2 ½ cups of flour until the dough comes together into a ball.
  3. Knead the dough: Turn the dough out onto a floured surface and knead for about 8 minutes, until it’s smooth and stretchy. Add a little extra flour if the dough feels sticky.
  4. Shape the pretzels: Divide the dough into 6 pieces and let them rest for a few minutes. Roll each piece into a 15-inch rope, then twist each one into a pretzel shape. Place the pretzels on a greased baking sheet. Cover and let them rise for 15 minutes.
