Simple Oven-Baked Ranch Chicken
Easy, flavorful, and perfect for sandwiches, wraps, or as a main dish!
Ingredients:
- 2 pounds boneless, skinless chicken breasts
- 1 (1 oz) packet dry ranch dressing mix (like Hidden Valley Ranch)
- 1 cup sliced pepperoncini peppers (drained)
- ¼ cup pepperoncini juice (from the jar)
- 4 tablespoons unsalted butter, sliced
- ½ cup water
Instructions:
- Preheat the oven: Set your oven to 350°F (175°C).
- Prep the chicken: Season the chicken breasts generously with the ranch seasoning mix and place them in the bottom of a medium-sized Dutch oven.
- Add the extras: Throw in the sliced pepperoncini peppers, and pour in ¼ cup of the pepper juice from the jar. Add the butter slices on top of the chicken, then pour in the ½ cup of water.
- Bake: Cover the Dutch oven with a tight-fitting lid and bake in the preheated oven for 1 hour to 1 hour and 15 minutes, until the chicken is super tender. The internal temperature should reach at least 165°F (74°C) if you check it with a meat thermometer.
- Shred and serve: Once the chicken is done, let it sit for about 5 minutes. Then, shred the chicken with two forks and enjoy!
