Ingredients:

  • 1 ½ cups white sugar (divided)
  • ¾ cup butter or margarine, melted
  • 1 large egg
  • ¼ cup molasses
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger

Instructions:

  1. Mix the wet ingredients: In a medium bowl, blend together 1 cup of sugar, melted butter, and the egg until smooth. Stir in the molasses.
  2. Combine the dry ingredients: In a separate bowl, mix the flour, baking soda, cinnamon, salt, cloves, and ginger. Gradually add the dry mixture to the wet ingredients and stir until everything is well combined. Cover and chill the dough for 1 hour.
  3. Preheat the oven: Set your oven to 375°F (190°C). While it's heating up, roll the dough into 1-inch balls. Roll each ball in the remaining ½ cup of sugar, then place them on ungreased cookie sheets, about 2 inches apart.
  4. Bake: Bake the cookies in batches for 8 to 10 minutes, or until the tops are cracked.
  5. Cool and enjoy: Let the cookies cool on wire racks before digging in!
