    These candied sweet potatoes are incredibly sweet and tasty—just right for the holidays!
Ingredients:
  • 4 pounds sweet potatoes, quartered
  • 3 cups miniature marshmallows, divided
  • 1 1/4 cups butter
  • 1 1/4 cups brown sugar
  • Ground cinnamon, to taste
  • Ground nutmeg, to taste
Instructions:
  1. Preheat the oven: Set your oven to 400°F and grease a 9x13-inch baking dish.
  2. Cook the sweet potatoes: Bring a large pot of water to a boil, then add the quartered sweet potatoes. Boil for about 15 minutes, just until they’re slightly underdone. Drain, then let them cool enough to handle so you can peel them.
  3. Make the marshmallow sauce: In a large saucepan over medium heat, combine 2 cups of the marshmallows, butter, brown sugar, cinnamon, and nutmeg. Stir occasionally until everything melts into a smooth sauce.
  4. Add the sweet potatoes: Stir the sweet potatoes into the marshmallow sauce. Mash about half of them, leaving the rest in bite-sized chunks for texture. Once mixed, transfer everything into your prepared baking dish.
  5. Bake the casserole: Place the dish in the oven and bake for 15 minutes.
  6. Add marshmallow topping: Sprinkle the remaining 1 cup of marshmallows evenly over the top and bake for another 5 minutes, or until the marshmallows are golden brown and slightly toasted.
