Candied Sweet Potatoes

Ingredients:
- 4 pounds sweet potatoes, quartered
- 3 cups miniature marshmallows, divided
- 1 1/4 cups butter
- 1 1/4 cups brown sugar
- Ground cinnamon, to taste
- Ground nutmeg, to taste
Instructions:
- Preheat the oven: Set your oven to 400°F and grease a 9x13-inch baking dish.
- Cook the sweet potatoes: Bring a large pot of water to a boil, then add the quartered sweet potatoes. Boil for about 15 minutes, just until they’re slightly underdone. Drain, then let them cool enough to handle so you can peel them.
- Make the marshmallow sauce: In a large saucepan over medium heat, combine 2 cups of the marshmallows, butter, brown sugar, cinnamon, and nutmeg. Stir occasionally until everything melts into a smooth sauce.
- Add the sweet potatoes: Stir the sweet potatoes into the marshmallow sauce. Mash about half of them, leaving the rest in bite-sized chunks for texture. Once mixed, transfer everything into your prepared baking dish.
